Peru, as many other farmers has been affected by corona this year. It has been difficult to hire people picking the coffee and as a result of this - many small farmers has made a joined cowork making the best out of their coffee. its very unsual I purchase coffees which is mixed variatals - however this on is outstanding. I has scored above 86 points as a coffee. Which is relatively high and goes hand in hand with the margin I purchase coffees at.
The community of small holderes are located in Cajamarca and Amazonas. They mainly grow Caturra and Catuai variatals from at an altitude of 1400-2000 masl.
The Coffees are certified organic.

As a general rule you should dial in your espresso using a scale. The first three shots is normally indicating your espresso flow and the appearance of how well your espresso flow/brew. Your first indicator should be the first drop appearing after activating starting the water flow (pump/bottom) I recommend the first drop to appear approx. at 6-8 sec. in that way your espressoshot will brew as long a 26-31 sec. If it appears before 4 sec. I will recommend you should grind finer and visa versa if the first drop appears to late/after 8 sec or more.
